Kale and Rice Casserole

Everyone in my family loves greens this way.


Ingredients:
4 cups cooked brown rice
1cup minced kale, collards, chard, or Spinach
1 1/4 cups milk (dairy or nordairy)
3 eggs
1 tablespoon nutritional yeast flakes
1/4 teaspoon sea salts
1/4 teaspoon sea salt
1/4 spoon black pepper
1/2 cup shredded chesse (optional)

Preheat oven to 375 degrees . Oil a 2-quart casserole dish. Mix greens into cooked rice, and spread in prepared baking dish. Beat together milk, eggs, nutritional yeast, and seasonings. Pour over rice. Top with shredded cheese if desired. Bake 40 minutes, or until firm.
