Mocha Almond Fudge Avocado Cake

Ingredients 


  • 1/8 cup vegetable oil
  • 1/4 cup avocado
  • 1 cup cake flour
  • 5 tbsp cocoa powder
  • Pinch of salt
  • 1 tsp baking powder
  • 3/4 cup raw sugar or agave syrup
  • 1 cup coconut milk
  • 1 tsp vanilla
  • 1/4 cup ground almonds or almond meal
  • 1 tbsp apple cider vinegar 

Directions

  • Pour into a "greased" pan of choice.
  • Pop into oven at 350 degrees and bake 30-40 minutes depending upon
  • size of pan. Edges will pull back when done.
  • Melt 1 cup sweetened chocolate - cut into batter 15 minutes into baking.
  • Avocado buttercream:
  • 1 avocado
  • 1 # powdered sugar
  • 1 tsp vanilla
  • 4 tsp lemon juice
