Smoked Salmon & Green Onion Latkes

Ingredients:
2 1/2 lbs Russet potatoes, grated
1 medium onion, grated
2 eggs, beaten
3/4 cup minced smoked salmon (lox)
1/4 cup matzo meal
1/4 cup finely minced green onion (green parts only)
canola oil

Directions:
In a large pan, heat about 1/4 inch oil. In a large bowl, toss all of the ingredients together to combine.
