- 1 head of lettuce (green leaf, red leaf, romaine or a simple iceberg) washed, drained & cut
- 3 carrots – peeled & grated
- 1 small red or yellow onion or shallots
- 1 tomato – optional
Dressing
- 1/4 cup of olive oil
- 1/2 a lemons juice
- salt
Preparation
- Wash, dry and cut the lettuce, peel and grate the carrots.
- Cut the small red onion to long slivers and dice the tomato.
- Prepare the dressing – simply mix all the ingredients in a small bowl.
- Place the lettuce, grated carrots, diced tomatoes and cut onion in a serving bowl.
- Pour the dressing over the top. Mix well and serve!
