Chickpea Crepes

imageIngredients: 


  • 160g chickpea flour
  • 1 tbsp olive oil plus more for frying
  • 500ml water
  • pinch of salt
  • 1/3 cup herbs (like rosemary, sage, thyme)
  • tomato, avocado, balsamic vinegar for serving 

Directions: 
  • Mix flour with water, salt and 1 tbsp olive oil and refrigerate overnight. 
  • In the morning mix it with a spoon a couple of times. Heat 1/2 tsp olive oil on a frying pan, pour 2 tbsp of a flour mix on it and spread some herbs.  Fry on one side until golden brown and delicately move on another side. Repeat with the rest of butter. I served it with cut tomatoes and avocado with a bit of balsamic vinegar.
