Ingredients
- 1 large orange bell pepper
- 1 medium zucchini, chopped into small cubes
- 2 or 3 slices of red onion, chopped into small cubes
- 1 medium tomato, chopped into small cubes
- 1/4 cup of fresh cilantro, chopped
- 1/2 small clove of garlic, minced
- 1/2 teaspoon of cumin
- juice from 1/2 lime
- 1/4 avocado, mashed
Directions:
In a large bowl, mix all of the ingredients except for the pepper. Next, stuff the pepper, grab a fork and enjoy!This recipe is a perfect addition to a low fat, raw vegan diet.
